Homemade Pasta

- 500g flour
- 3 large eggs
- 1 tbsp olive oil
- pinch of salt
Instructions
This recipe is for a basic pasta dough that can be rolled and cut into various shapes:
- Dust a clean, flat surface with some flour
- Mound 500g of flour into a volcano shape on your work surface, creating a well in the center
- Crack the eggs into the well. Add the olive oil (optional) and salt
- Gradually incorporate the flour into the eggs, starting from the edges of the well
- Once the mixture comes together, knead for about 10 minutes, or until it is smooth and elastic
- Wrap the dough in plastic wrap and let it rest for about 30 minutes
- Divide the dough into smaller pieces. Use a pasta machine or a rolling pin to roll out the dough to your desired thickness
- Cut the pasta into your preferred shape (fettuccine, tagliatelle, etc.)
In order to cook the homemade pasta, bring a large pot of salted water to a boil. Add the pasta to the boiling water and cook for about 2-3 minutes (!), or until al dente. Drain the pasta and serve with your favorite sauce.
We occasionally use the Springlane pasta machine* for our homemade pasta. All in all, it does what it’s supposed to, but attaching it to the table or worktop is a little more complicated – at least for us. The pasta machine is attached using a clamp, but the area in question must be wide enough. Unfortunately, our dining table is not suitable for this and the protruding edge of the worktop is a little narrow, so the clamp cannot be attached 100% securely. However, if you have a suitable option, it is a great tool for making your own pasta. You can easily adjust the thickness of the dough and it ends up with the same thickness everywhere. The whole thing can certainly be done with a rolling pin as well, it just requires a little more finesse.
